Honeydew Lime Breakfast Tarts

Here's How To Make It

Makes 5 - Prep Time: 20 Minutes - 30 Minutes to set

Honeydew Lime Creme Ingredients

  • 1 cup honeydew melon, chopped
  • 1 lime, juiced
  • 1 cup cashews, soaked overnight
  • 2 tablespoons maple syrup
  • 1 scoop Truvani Wild Caught Marine Collagen

Crust Ingredients

  • 1 cup almonds
  • ½ cup pecans
  • 8 medjool dates
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Directions

    Place all of the creme ingredients in a blender and blend until smooth. Set aside.

    Place all of the crust ingredients in a food processor and pulse until combined.

    Press the crust into mini tart pans. You can also line a cupcake pan with liners and press the crust into the bottom of each liner.

    Pour roughly ¼ cup of creme into each tart pan. Place in the refrigerator for at least 30 minutes to set.

    Top with your desired toppings and enjoy!
